Chef Steven has been at Plymouth Village for 12 years. He started in the community as a dishwasher while in high school and worked his way up. He became the executive chef in 2015 after completing his studies at the Art Institute of Southern California.
Q: What do you enjoy most about working at Plymouth Village?
A: The residents at Plymouth Village are truly amazing and extremely supportive of the dining program. They love trying new items that I and my sous chef come up with for our monthly grills.
Q: How would you describe your cooking style?
A: I don’t think I have a specific cooking style. I love cooking Mexican and South American cuisine. I also enjoy classical French techniques and recipes, tweaking them to fit what I do.
Q: What’s your favorite item on the menu?
A: I would have to say it’s either our braised lamb shank or our chicken curry. Both items are awesome.
Q: What do you like to cook at home?
A: When I am cooking at home it usually means I am entertaining family or friends; for those occasions I love cooking carne asada, Spanish rice and a grilled vegetable of any kind.
Q: What’s a tip or technique you use in the kitchen that people may not know about?
A: Keep it simple. Fresh herbs, salt and pepper can do wonders for pretty much any protein. Throw in a splash of citrus and it will be amazing.
